11S globulin seed storage protein(A11Sg)
Amaranth 11S globulin (A11Sg) is the most abundant globulin in amaranth seeds and has a high nutritional value. Notably, it is rich in the amino acids recognized for its nutritional value lysine, methionine, serine, and cysteine, which are limitedin cereals. In the amaranth seeds, this protein is found as a hexameric conformation; a monomer consists of acidic and basic subunits linked by a disulfide bond. It has also been demonstrated that A11Sg has high thermal stability.
